Spring has Sprung

And here is picture of the first wee crocuses-hurrah, more cause to smile! Urgh it hurts being so happy. And, because I am so wonderfully happy and good to you all, here is the first flurry of springtime recipes…..

Home-made Granola (makes 3 large jars)

This is so easy, economic and delicious. It’s also very satisfying knowing exactly what goes into your breakfast, no strange additives or extra sweeteners. Enjoy with natural yoghurt, fruit compote or fresh fruit, and an extra drizzle of honey.

600g whole jumbo oats

200g dessicated coconut

100g sunflower seeds

100g nuts of your choice (i recommend almonds, brazils, pecans)

100g pumpkin seeds

pinch salt

3 tbsp runny mild honey, melted in 600ml warm water

Mix all this together, then lay out on a lined baking tray and put in the oven at about 160. Check every 15 mins, keep turning and spreading the granola until it is golden all the way through. When it’s toasty and golden (usually this takes 40-60 mins) remove and whilst warm stir through some dried fruit of your choice, I used chopped dried aprictos, raisins, cranberries, dates and prunes. Pour into jars and enjoy!
